Marikina eats: Fowl Mouth Lady puts own spin on peri-peri chicken



MANILA -- Food parks have been popping up all over Metro Manila. Hidden in these parks are concepts that showcase unique takes on familiar favorites that are worth the effort to find them.

One such foodie destination is Fowl Mouth Lady with its own take on Latin American cuisine at The Truck Park on Gil Fernando Avenue, Marikina City.

Karen Caballero used her years of experience in the food industry to put up Fowl Mouth Lady. Her previous job took her around Asia to evaluate restaurants that can be brought back to the Philippines. During her trips, she became a frequent customer of a very popular Singaporean peri-peri restaurant.




Since she observed that chicken is a must item in any Filipino menu, she used put these two learnings together, collaborated with chef Mikel Zaguirre of Locavore fame and took the big jump to food entrepreneurship.

Fowl Mouth Lady’s specialties include the Badass Chicken, its take on peri-peri chicken, in which chicken breasts are cooked sous vide for an hour to seal in the peri-peri spices.

The Pork Mofongo, meanwhile, mouth-wateringly melts at first bite. The four hours of cooking time was evident as the pork crumbles at first bite.



If you can’t decide between the pork and the chicken, get half portions of each in the Badass Mofo combo.

The sides of Fowl Mouth Lady, which is open from 3 p.m. to 12 midnight on weekdays and from 3 p.m. to 1 a.m. from Fridays to Sundays, are unique dishes in themselves. Gremolata, pico de gallo, and pickled cabbage nicely complement the spicy flavor. The Pork Mofongo comes with mashed plantain, the banana’s sweetness nicely mingling with the spiciness of the dish.

Dirty Truffle Rice is an available upgrade for those not content with plain rice. For pasta lovers, garlic noodles can be served instead of rice.



The Mofongo and peri-peri chicken can also be ordered in a wrap or in a sandwich, oozing with aioli and chili oil for heat.

With unique Latin American dishes at food park prices, Fowl Mouth Lady is effin’ good.
